  • Here’s a different way to serve potatoes - great for taking to an outdoor meal!
  • Roast halved cocktail potatoes in the oven until tender. Lightly grill bacon in oven or in air fryer, then thread the bacon and potatoes onto short skewers. At this point they can be refrigerated ready for reheating later.
  • For the Creamy Lemon Dressing - Mix together
  • 1 cup mayonnaise
  • 2 tbsp sour cream
  • 2 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 6 spring onions/scallions, finely sliced
  • When ready to serve, spread the dressing onto a serving platter and top with a few spinach leaves. Top with reheated skewers and sprinkle with parsley.
