  • 1.5 cups / 360ml Chicken Stock (preferably low-sodium)
  • 2 tbsp Heavy/Double Cream
  • 2 tbsp Crème Fraîche (see notes)
  • 2 tbsp Flour
  • 1 tbsp Butter (preferably unsalted)
  • 1 heaped tsp Dijon Mustard
  • ¼ tsp Dried Thyme
  • Olive Oil, as needed
  • Salt & Black Pepper, as needed
