Hummus (skinny)

Ingredients
  • 1 can chickpeas, rinsed and drained
  • 1 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1 clove garlic crushed
  • ½ tsp ground cumin
  • ½ tsp sea salt
  • 2 Tbsp tahini
  • 2 Tbsp chopped parsley (optional)
Steps
  1. In bowl of food processor or blender, combine chickpeas, lemon juice, olive oil, garlic, cumin, salt, and tahini. Purée until smooth. If necessary, add a bit of water to bring it to a smooth consistency.
  2. Pour into a bowl and stir in chopped parsley, if desired.
