Ingredients
  • Whole grain tortilla, fajita size
  • Canned tuna, drained
  • Cooked drained bacon, chopped
  • Sautéed onion, sweet pepper, cubanelle pepper, and any mild hot pepper, chopped
  • Green tomatillo enchilada sauce
  • Shredded or cubed cheddar and mozzarella cheese (half for filling, half for top)
  • Cottage cheese (full fat or close to it)
  • Chopped cilantro (stems too, add some to filling and some on top)
  • Chopped scallions or red onion (for topping)
Steps
  1. Make filling, adding some of the sauce
  2. Roll, use toothpick if needed
  3. Cover pan bottom w sauce
  4. Add rolls
  5. Put sauce on, then cheese and scallions or onion. Don't put too much sauce, leave edges dry
  6. Bake at 375 for 20 to 30 minutes, uncovered
