Steamed Cranberry Orange Muffins (vegan) (oil-free) (gluten-free)
Moist and tender muffins

Ingredients
  • 1 very ripe, med size banana, mashed
  • 2 tbs sugar
  • 1 tsp orange extract
  • ¼ cup water
  •  
  • ½ cup chickpea flour
  • ½ cup rolled oats
  • 1 tsp baking powder
  •  
  • ½ cup fresh or frozen cranberries
Steps
  1. Have your steamer hot and ready to go
  2. In a large bowl, mash the banana
  3. Add sugar, orange extract, and water and mix well
  4. Add flour, oats and baking powder and mix well
  5. Fold in cranberries
  6. Fill muffin cups about ¾ full and place in steamer
  7. Steam for 30 minutes
  8. Allow to cool and serve
