Potato and Tofu Hash
Ingredients
  • 1 large red onion
  • 4 medium red potatoes, grated
  • Veggies - eg capsicum, courgettes, cabbage
  • ½ cup frozen peas
  • ½ pound extra firm tofu, preferably silken, crumbled
  • 2 tbs drained and finely chopped sun-dried tomatoes
  • 1 tsp rosemary (optional)
Steps
  1. Cook veggies
  2. Add potato and cook for 10 to 15 min until potatoes begin to brown
  3. Add peas and tofu and cook for 5 min
  4. Add tomatoes and heat through
  5. Season and add rosemary
