Ingredients
- 4 cups of pitted and chopped cherries
- 2.5 to 4 cups of sugar
- 3 T low sugar pecting
- 2 T lemon juice (store bought)
Steps
- Sterilize jars, put lids in hot water.
- keep jars in hot water in canner.
- Prepare cherries: wash and pit.
- Mix pectin with half a cup of sugar.
- Finely chop cherries in food processor.
- Add cherries and pectin/sugar to Green big pot.
- Bring to boil.
- Add lemon.
- Add the rest of the sugar.
- Slowly bring back to boiling.
- Foam as needed.
- 1 minute boiling.
- Check for jellying.
- Fill jars to within ΒΌ inch (use wide mouth funnel).
- Put lid on, close ring tightly.
- Place back on canner.
- PRocess for 10 minutes.
