Cherry Jam
Ingredients
  • 4 cups of pitted and chopped cherries
  • 2.5 to 4 cups of sugar
  • 3 T low sugar pecting
  • 2 T lemon juice (store bought)
Steps
  1. Sterilize jars, put lids in hot water.
  2. keep jars in hot water in canner.
  3. Prepare cherries: wash and pit.
  4. Mix pectin with half a cup of sugar.
  5. Finely chop cherries in food processor.
  6. Add cherries and pectin/sugar to Green big pot.
  7. Bring to boil.
  8. Add lemon.
  9. Add the rest of the sugar.
  10. Slowly bring back to boiling.
  11. Foam as needed.
  12. 1 minute boiling.
  13. Check for jellying.
  14. Fill jars to within ΒΌ inch (use wide mouth funnel).
  15. Put lid on, close ring tightly.
  16. Place back on canner.
  17. PRocess for 10 minutes.
