Easy Microwave Lemon Curd
Ingredients
  • ¾ cup (170g) lemon juice, freshly squeezed
  • 1 cup (198g) granulated sugar
  • 8 tablespoons (113g) unsalted butter, melted
  • 2 large eggs, plus 2 large yolks*
  • zest of 1 lemon
