Gingerbread Cookies

2 tsp ginger

1 tsp nutmeg

1 tsp cinnamon

1 ½ tsp baking soda

1 cup (2 sticks) salted butter, softened at room temperature

½ cup evaporated milk

1 cup molasses

4 cups all-purpose flour, sifted (plus additional 1 to 1 ½ cups of flour, as needed, to form a workable dough)
