Tortellini and sausage soup
Tortellini and sausage soup
Ingredients
  • 1 pound Italian sausage
  • 1 cup chopped onion
  • 1 clove garlic
  • 5 cups beef broth
  • ½ cup water
  • ½ cup red wine
  • 2 (14.5oz) cans chopped tomatoes
  • 1 cup thinly sliced or diced carrots
  • ½ Tbsp fresh basil
  • 1 8oz can tomato sauce
  • 1 ½ cups green beans or zucchini
  • 8 oz tortellini
  • 3 Tbsp parsely chopped
Steps
  1. Brown sausage, Remove from pan and drain sausage.
  2. Sauté onions and garlic in drippings.
  3. Add the rest of the ingredients EXCEPT tortellini and beans or zucchini and parsley.
  4. Bring to boil, simmer uncovered 30 minutes.
  5. Skim fat from soup. Stir in vegetables. Simmer covered for 30 minutes.
  6. (Cook tortellini per package instructions and add to individual bowls if planning for leftovers.
  7. This will prevent them from absorbing all the liquid.)
  8. Add tortellini to bowls and grate fresh cheese over top.
