Super Crispy-Skinned Slow-Roasted Pork Shoulder

  • 1 bone-in, skin-on pork shoulder, 8 to 10 pounds (sometimes called a “Picnic Cut” in the Northeast)

  • Crusty rolls, chimichurri, or barbecue sauce (optional)
