Veggie Muffins for Kids Who Don'T Like Vegetables
Ingredients
  • subheading: Dry Ingredients:
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour (substitute 1 cup of all-purpose flour if you do not have whole wheat)
  • ¾ tsp baking soda
  • ½ tsp salt
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • subheading: Wet Ingredients:
  • ¾ cup sugar
  • 4 tbsp unsalted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup apple juice (water can be substituted if necessary)
  • ½ cup (8 fl oz) plain or vanilla yogurt
  • Fruit and Veggie puree: You can use any combination of fruits and veggies that you want. You will need a total of 2 ½ cups of puree. This is what I use and it makes almost exactly the correct amount.
  • 1 carrot (or about 8 baby carrots)
  • ½ cup steamed broccoli
  • 1 zucchini
  • 1 small apple
  • 1 banana
  • ¼ cup applesauce
