15-Minute Veggie Peanut Noods
Ingredients
  • 2 tablespoons kosher salt
  • 1 (10-ounce) bag broccoli florets (about 3 to 4 cups)
  • 8 to 10 ounces fresh or dried ramen noodles (3 packets)
  • 1 cup frozen shelled edamame
  • ½ cup creamy peanut butter
  • ⅓ cup low-sodium soy sauce
  • 3 tablespoons rice vinegar
  • 1 tablespoon sriracha, plus 1 to 2 tablespoons more, if desired
  • 1 tablespoon honey or sugar
