  • Creamy Edamame Pesto Dressing
  • I went about making this dressing because I LOVE pesto, who doesn’t? But also, I wanted to make a sauce that can double as a dressing and also has a protein packed punch to meet my health and wellness goals while I’m working out, as I find vegetables are much more fun when they are sauced up! So build yourself a bowl of veggies and drizzle this stuff on, cold or hot on greens or pasta for that traditional pesto flavor everyone loves!
  • Ingredients
  • 1 cup edamame, shelled
  • 1 cup basil leaves, packed
  • 1 cup vegetable broth
  • 1 garlic clove
  • 2 tablespoons nutritional yeast
  • 1 tablespoon white miso
  • juice of half lemon
  • ¼ teaspoon sea salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon brown rice protein (optional - see tip)
