Baked “Pizza” Pasta with Soppressata
Ingredients
  • 4 ounces soppressata
  • ¼ cup extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 2 medium (2-ounce) shallots, sliced (about 1 cup)
  • 4 large garlic cloves, sliced (about 3 tablespoons)
  • 2 tablespoons chopped fresh oregano
  • 1 teaspoon kosher salt, divided
  • ½ teaspoon crushed red pepper, plus more for garnish
  • ¼ teaspoon black pepper
  • ¼ cup harissa
  • ¼ cup tomato paste
  • ¼ cup dry white wine
  • 1 pint cherry or grape tomatoes
  • 12 ounces Grattini (Grated Egg Pasta) (see Note)
  • 1 ½ cups unsalted chicken broth
  • 1 (14-ounce) can no-salt-added chickpeas, drained and rinsed
  • 12 ounces low-moisture whole-milk mozzarella cheese, shredded (about 3 cups), divided
  • Small basil leaves and hot honey, for garnish
