Vegan Cajun Tofu with Creamy Grits and Greens
Ingredients

  • 1 Block extra firm tofu
  • 1 to 1 ½ Tbsp. Cajun seasoning(store bought, or homemade-recipe below), depending on how spicy you want it.

  • 1 C. Grits, old fashioned
  • 4 C. Water
  • 2 tsp. Salt
  • 2 Tbsp. Vegan butter, I used Earth Balance
  • subheading: Garlicky Greens:
  • 2 Tbsp. Olive oil
  • 3 C. Greens, I used Kale and Dandelion greens
  • 4 to 6 Cloves of Garlic
  • Salt and Pepper to taste
  • subheading: Cajun Seasoning:
  • 2 tsp. Garlic powder
  • 1 tsp. Onion powder
  • 1 tsp. Oregano
  • 1 tsp. Thyme
  • 1 tsp. Black pepper
  • ½ tsp. Cayenne pepper
  • 1 tsp. Salt
  • 2 tsp. Paprika
  • ½ tsp. Red pepper flakes
