Ree's Chipotle Chicken Chili + a Pioneer Woman Cookbook
Ingredients
  • 2 tablespoons Olive Oil
  • 1 whole Yellow Onion, diced
  • 4 cloves of Garlic, minced
  • 2 pounds boneless skinless Chicken Breasts, diced
  • 1 bottle Mexican Beer {or any beer}
  • 1 {14 ounce} can of Diced Tomatoes {I used tomato sauce}
  • 3 Chipotles in Adobo, minced
  • 1 {14 ounce} can Black Beans, drained and rinsed
  • 1 {14 ounce} can Pinto Beans, drained and rinsed
  • 1 {14 ounce} can Kidney Beans, drained and rinsed
  • 1 tablespoon Chili Powder
  • 1 tablespoon Cumin
  • 1 teaspoons Kosher Salt {I added two teaspoons}
  • ΒΌ cup Masa Harina {corn flour}
  • 1 medium Lime, juiced

  • Sharp Cheddar Cheese, grated
  • Fresh Cilantro, torn
  • Lime Wedges
  • Sliced Green Onions
