Ingredients
- 5 courgettes aka zucchini
- 1 onion
- 3 spring onions (if you have them if not go 2 onions)
- 2 cloves garlic
- dash of vinegar (i.e. throw in a lug of vinegar)
- salt & pepper ( I like lots of pepper)
- 2 tbsp sour cream (or cream or creme fraiche)
- a good handful of thyme & parsley (I used fresh b/c it’s growing well out there, dried will do)
- 4 cups chicken stock (I used a carton b/c no fresh in the house, obviously a cube works)
