Ingredients
  • ½ cup steel-cut oats
  • 1 cup sweet potato, chopped
  • 2 Tbsp golden raisins
  • 1⅓ cup water
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp cardamom
  • ⅛ tsp ginger
  • Pinch kosher salt
  • ¼ cup almond or coconut milk
Steps
  1. Combine oats, sweet potato, raisins, water, vanilla, and spices in pot.
  2. Seal lid, select manual Pressure Cook, set pressure to High, and cook for 15 minutes. Release steam using Natural Release.
  3. Once steam is fully released, remove lid and stir. Sweet potato may be left in small chunks or mashed with masher/ricer.
  4. Add milk and an optional additional pinch of salt, stir, and spoon into bowls.
Notes
  • Be sure to include Natural Release (approximately 10 minutes) into total preparation time.
  • To prepare in advance, combine ingredients as above, and select Delay Start. Set timer to begin cooking at T minus 30 minutes. :-D
  • Recipe can be cooked as-is (no scaling) in an Instant Pot Mini (3 qt).
