Ingredients
  • ½ lb. ground beef (7 to 10% fat)
  • ¾ lb. ground pork
  • ⅓ cup very finely diced onions
  • 1 pkg. gelatin
  • 1 egg
  • 3 Tbs. flour
  • ¼ cup water
  • 2 cloves garlic, finely chopped (Or 2 tsp. garlic from a jar)
  • 1 tsp salt
  • 1 tsp. pepper
  • 1 tsp. paprika
  • ⅛ tsp. cumin
  • note: I'm not a fan of Worcestershire sauce so I don't use that.
  • note: Also could try celery and chopped carrots. Make fine in blender with the onions. Maybe cook first.
  • note: Gelatin is to make up for using beef instead of veal. Has more flavor, but still sticks together. I haven't tried without gelatin so don't know how much of a difference it makes.

  • Ketchup glaze (I have not made this yet)
  • Brown Gravy (Instead of glaze)
Steps
  1. Mix together all the ingredients. I use my hands. Don't overmix.
  2. Add it to a meatloaf pan.
  3. Let sit in fridge at least ½ hour. Can even make the day before and let sit. (Does sitting matter? I do it because it's like frikadeller and I do it there....)
  4. Bake at 375° for 40 minutes.
  5. Make the gravy while it's in the oven.
  6. If using glaze, may have to broil it.
Notes
  • total calories: 1814 (beef 400, pork 890, gelatin 330, egg 80, flour 85, onion 30)
  • Freezing: I have frozen the loaf raw and put it directly into the hot oven. Needs about an hour.
