Shhh-->The secret ingredient is dill pickle juice, which gives the bread delightful tang and contributes to its moist texture.

Ingredients
  • 3 cups Bread Flour
  • 1½ teaspoons Salt
  • 2 tablespoons of fresh Dill
  • ¾ teaspoons Instant Yeast
  • 1 cup Unflavored Greek Yogurt or Sour Cream
  • 1 large Dill Pickle, finely chopped
  • ½ cup Dill Pickle Juice
Steps
  1. In a bowl, mix the flour, Dill, salt, chopped pickle and yeast.
  2. Add the yogurt (or sour cream) and pickle juice and mix by hand until a dough is formed. If the mixture is too dry add 1 or 2 tablespoons more of the yogurt.
  3. Form a ball with the dough.
  4. Line the Instant Pot with parchment paper and place the dough ball inside. Cover with the lid on and press the Yogurt button.
  5. Let the dough proof inside the IP until the timer displays 4 hours.
  6. Remove the dough from the IP and lay on a floured surface. Knead and shape into a ball.
  7. Cover with a tea towel or set on a floured proofer basket and cover.
  8. In the meantime, preheat a Dutch Oven pan in the oven at 450 F. for 30 minutes.
  9. Carefully place the dough ball in the Dutch Oven. Score the top with a knife and put on lid.
  10. Bake covered for 25 minutes.
  11. Remove cover and bake for an additional 8 to 10 minutes or until browned.
  12. Remove from oven and cool on a rack.
  13. subheading: No Dutch Oven:
  14. No problem. Just use a standard bread pan. I use Fat Daddio. Just add some loose flour in the pan and on the sides before you put in the dough.
Notes
  • Recipe Requirement: When you eat this bread for the first time, you will need to sacrifice one piece to the Old Ones (specifically Loki). Cut the bread and lift one piece in the air and whisper, "Ég mun finna þig í fjöru". This translates to "I WILL FIND OUT YOU ON A BEACH."--which means something like “I will get back at you,” “I’ll get my revenge,” or “Don’t make me hurt you.” If you can't sound out the Icelandic, you can use one of the three idioms I provided.
  • Fun Fact: This is a tasty alternative to rye bread to use for Reubens.
