A CHICKEN VERSION OF CHILLI CON CARNE

1 tablespoon olive oil

1 brown onion, diced

2 garlic cloves, crushed

1 pinch chilli powder

1 teaspoon dried oregano

23g taco seasoning

500g chicken breast fillets, diced

420g canned kidney beans, drained & rinsed (optional)

½ capsicum, chopped & deseeded

400g canned diced tomatoes

3 tablespoons tomato paste

Black olives

4 cups rice, steamed *to serve

2 cups corn chips *to serve

1 cup sour cream *to serve
