Apple, Apricot and Cardamom Chutney
Ingredients

  • Cut the apples into small pieces and add to the pan with the remaining vinegar, cardamom, sugar, apricots and a sprinkling of salt and pepper. Stir over a low heat until the sugar has dissolved completely, then increase the heat and simmer steadily, stirring occasionally until the mixture is very thick.

  • 2tsp Cardamom pods crushed
  • 350g Unrefined light muscovado sugar
  • 110g Dried apricots roughly chopped
