  • 1 large egg plus 1 large yolk
  • 57g (¼ cup) fed and active sourdough starter or sourdough discard

  • 170 grams (6 oz.) cream cheese, softened
  • 50 grams (¼ cup) sugar
  • 4 grams (1 ½ tsp.) all-purpose flour
  • 1 gram (¼ tsp.) pure vanilla extract
  • Pinch of salt
  • 5 to 10 grams (1 to 2 tsp.) lemon juice

  • 10 grams (1 Tbsp. plus 1 tsp.) all-purpose flour
  • 16 grams (1 Tbsp. plus 1 tsp.) granulated sugar
  • 7 grams (½ Tbsp.) unsalted butter, cut into pieces and chilled
