How to Make Gluten-Free Seitan
Ingredients
  • ⅓ cup teff flour
  • ⅓ cup buckwheat flour
  • ⅓ cup sweet rice flour (glutinous rice flour)
  • ¼ cup moth bean flour (or mung bean or lentil flours)
  • ¼ cup nutritional yeast
  • ¼ cup tapioca flour
  • 3 tsp xanthan gum
  • ½ tsp salt
  • ½ cube vegan vegetable bullion (no salt added)
  • ½ tsp ground black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp oregano
  • ¼ tsp sage
  • ¼ tsp thyme
  • ¼ tsp paprika
  • ¼ tsp marjoram
  • ⅛ tsp celery seeds
  • ⅛ tsp ground rosemary
  • ¾ cup cooked kidney beans (puree in food processor before adding to the flour mixture)
  • 1 ½ tbsp coconut aminos (or Braggs)
  • ¼ cup ketchup
  • ½ cup water
