Low Carb Skillet Chicken Parmesan
Ingredients
  • 1 ½ pounds boneless-skinless chicken breasts about 3 to 4 large breast halves
  • salt and pepper
  • subheading: Seasoned Crumb / Breading Mixture:
  • ½ cup grated Parmesan cheese (1 oz)
  • 1 cup crushed pork rinds (1 oz)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ¼ teaspoon granulated garlic
  • ¼ teaspoon granulated onion
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 large eggs, beaten
  • 2 tablespoons olive oil
  • subheading: Finishing Ingredients:
  • 2 cups low carb Marinara Sauce (I use Rao's)
  • 6 ounces fresh mozzarella cheese
  • ½ cup grated Parmesan cheese (1 oz)
