Hearty Vegetable Barley soup

Ingredients
  • 1 lb. ground beef
  • ½ cup chopped onion
  • 1 clove garlic
  • 5 cups water
  • 1 14 oz. can diced tomatoes
  • ½ cup medium barley
  • ½ cup sliced celery
  • ½ cup sliced carrots
  • 1 can beef broth
  • ½ teaspoon dried basil
  • 1 bay leaf
  • 1 pkg. frozen mixed vegetables
Steps
  1. In a 4-quart Dutch oven, brown meat. Add onion and garlic; cook until onion is tender. Stir in remaining ingredients except frozen vegetables. Cover; bring to a boil. Reduce heat; simmer 50 to 60 minutes, stirring occasionally. Add frozen vegetables; cook about 10 more minutes or until vegetables are tender.
