Irwin Family Merengue Cookies
Melt in your mouth minty deliciousness

Ingredients
  • 2 egg whites
  • ⅛ tsp salt
  • ⅛ tsp cream of tartar
  • ¾ c sugar granulated
  • ½ tsp vanilla
  • 1 c chocolate chips
  • 3 Tbs crushed candy canes (3 regular ones)
Steps
  1. Separate out egg whites, let sit out to room temperature before beating.  Heat oven to 250°.  Beat egg whites in a small bowl until foamy.  Add salt and cream of tartar until soft peaks form.  Add sugar 1 Tbs at a time beating after each addition.  When stiff, fold in candies.  Drop onto greased sheets.  Bake 20 to 25 minutes.
