Syrian Aubergine & Chickpea Ragout
Ingredients
  • 2 medium aubergines (about 500g in total)
  • 4 tbsp of olive oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, finely sliced
  • ½ tsp of ground cinnamon
  • ¼ tsp of freshly grated nutmeg
  • A generous bunch of fresh flat-leaf parsley, chopped
  • 4 tomatoes, skinned and chopped
  • 250g of cooked, soaked dried chickpeas, or the contents of 1 x 400g can, drained
  • 2 tbsp of chopped fresh mint
  • Salt & ground black pepper
  • A generous bunch of fresh coriander/cilantro, chopped, to garnish
  • Warm bread, to serve
  • Plain yogurt, to serve
