Ingredients

  • 1 block tofu ($2.50, 315 calories)

Steps
  1. Drain as much of the water from the tofu as possible by squeezing with a tea cloth/towel.
  2. Crumble up the tofu until it resembles the consistency of cottage cheese.
  3. Add tofu and the remaining ingredients to a bowl, mix well.
  4. This recipe makes about 3 cups of the salad. $3.90 and 570 calories per recipe, with ½ cup being a nice sized appetizer/snack. I like it best with crackers, lettuce leaves, or carrots.
