This is from our friend who came to town and cooked for us.
Servings: 8
  • 2 cups mayonnaise
  • 2 cups grated Parmesan cheese
  • 1 cup finely chopped onion
  • 2 (13 oz) cans artichoke hearts in water, drained
  • 2 tablespoons lemon juice
  • 1 teaspoon black pepper
  • 6 tablespoons breadcrumbs
  • 2 tablespoons oil
  1. Preheat oven to 400. Mix mayonnaise, cheese, and onion.
  2. Finely chop or process artichoke hearts and combine with the mayo mixture.
  3. Stir in the lemon juice and pepper. Pour into casserole dish and sprinkle with breadcrumbs and oil.
  4. Bake 25 minutes or until it looks done.
