Muhammara (Roasted Pepper & Walnut Spread)
Syrian & Lebanese Vegan Dip
Ingredients
  • 2 cups walnuts
  • 1 cup breadcrumbs
  • 2 red bell peppers (fresh or jar)
  • 1 tsp crushed garlic
  • 1½ tblsp lemon juice
  • 2 tblsp Pomegranate Molasses
  • 1 tsp salt
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ¼ tsp cayenne pepper
  • 1 tsp Allepo Pepper Flakes
  • 3 to 4 tblsp Olive Oil
Steps
  1. Roast walnuts with drop olive oil in fry pan to lightly toast & set aside to cool
  2. Toast breadcrumbs in fry pan to lightly toast & set on top of walnuts to cool
  3. Blacken red peppers on stove until soft & place in bowl to cool, place cling film over bowl to steam skin from pepper
  4. Remove skin & seed pods from peppers
  5. Put walnuts, breadcrumbs & peppers into food processor & chop
  6. Add garlic + lemon juice + pomegranate molasses + salt + paprika + cumin + cayenne pepper + Aleppo pepper + Olive oil & blend till either chunky or smooth (personal preference)
  7. Adjust salt to taste
