Kelly's Modified Jennifer Aniston Salad
Ingredients
  • 1 C quinoa*, dry
  • 1⁄2 medium red onion, diced
  • 1 1⁄2 C persian cucumber, finely diced
  • 1 15-oz can chickpeas, rinsed and drained*
  • 2⁄3 C crumbled feta cheese
  • 1⁄2 C chopped salted and roasted pistachios
  • 1⁄4 C fresh mint, chopped
  • 1⁄2 C parsley, chopped
  • juice of 1 medium lemon (about 2 T)
  • 1⁄4 C extra virgin olive oil
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 4 strips bacon, cooked (optional)
