Herb roasted potatoes Poupon

Ingredients
  • ⅓ cup gray Poupon mustard
  • 2 tablespoons olive oil
  • One clove garlic, chopped
  • ½ teaspoon of Italian seasoning
  • Six medium red skin potatoes, cut into chunks, about 2 pounds
Steps
  1. Mix all ingredients except potatoes in a small bowl
  2. Please potatoes in a lightly greased 13 x 9" baking pan and toss with mustard mixture
  3. Bake at 425° For 35  to 40 minutes or until fork tender, stirring occasionally
