Ingredients
  • 1 cup pumpkin puree
  • ¾ cup cottage cheese
  • 1 farm fresh egg
  • ½ cup heavy whipping cream
  • 2 cups unsweetened almond milk
  • 6 doonks THM Pure Stevia Extract Powder (a doonk is ⅓2 tsp.)
  • 2 tsp. pumpkin pie spice
  • ½ tsp. glucomannan
  • ½ tsp. cream of tartar
  • Pinch salt
  • 2 tsp. imitation vanilla
  • ½ block (4 oz.) cream cheese
  • subheading: Cheesecake Crust Crumbs (optional):
  • 1 T butter, melted
  • 1 tsp. Truvia or ½ tsp. THM Sweet Blend
  • 2 to 3 T low-carb flours of choice (I like a combination of almond flour, oat fiber, and ground golden flax)
  • ¼ to ½ tsp. ginger, optional (for a gingersnap cookie crust)
