sub white beans for limas
Ingredients
  • 1 large onion, chopped

  • 8 cups vegetable broth
  • 16 ounces dried large lima beans, soaked overnight
  • 2 large sweet potatoes or 1 large butternut squash
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon freshly ground white pepper
  • 1 bunch kale, stems removed, leaves torn into bite-sized pieces
  • 1 tablespoon balsamic vinegar, or more to taste
  • 1 cup fresh parsley, chopped
