Pecan-Crusted Chicken Schnitzel

  • 500g small white potatoes, halved if large
  • 250g cooked beetroot, cut into wedges
  • ½ cup vegetable oil
  • ¼ cup panko breadcrumbs
  • 2 tbs finely chopped pecans
  • 1 tbs Woolworths sesame seeds
  • 2 free range eggs
  • 1½ tbs honey mustard
  • 1 small garlic clove, crushed
  • 4 chicken breast schnitzels
  • 2 tbs finely chopped continental parsley
  • 60g baby spinach and rocket mix
  • 1 green apple, cored, sliced
  • 1 tbs lemon juice
