Fried Fish with Chili Sauce
Ingredients
  • 1 whole red grouper (or any white fish) 1 to 1.5lbs (.6-.7kg)
  • 1 to 2 cups oil for deep frying
  • 1 tsp salt
  • ½ cup garlic cloves
  • ½ cup small thai chilies (mix a few orange chilies or long chilies in if you wish)
  • ½ cup tamarind paste (¼ cup tamarind pulp + ¼ cup hot water, squeezed)
  • ¼ cup palm sugar
  • 2 tbsps fish sauce
  • A few sprigs of coriander
