Japanese Fried Oysters (Kaki Fry) 牡蠣フライ

Ingredients
  • 1 jar oysters ( 10 fl oz or 296 ml; 1 jar contains about 7 oysters)
  • 1 cup panko (Japanese breadcrumbs)
  • 1 Tbsp extra virgin olive oil
  • 3 Tbsp all-purpose flour (plain flour)
  • 1 large egg (50 g each w/o shell)
  • 1 Tbsp water (for the egg mixture)
  • subheading: For the Homemade Tartar Sauce:
  • 2 large eggs (50 g each w/o shell)
  • ¼ onion
  • 4 sweet gherkins
  • ¼ tsp Diamond Crystal kosher salt
  • freshly ground black pepper
  • 1 Tbsp lemon juice (squeezed from ½ lemon)
  • 4 Tbsp Japanese Kewpie mayonnaise (you can make homemade Japanese mayo)
  • 3 sprigs parsley (plus more for garnish)
  • 1 tsp Japanese karashi hot mustard
