Healthy Instant Pot Thai Peanut Noodles
Ingredients

  • ¼ cup peanut butter - (creamy)
  • 1 Tbsp vegetable oil
  • ½ cup bell peppers - julienned
  • ½ cup carrots - julienned
  • 1 Tbsp ginger - minced
  • 4 green onions - sliced (white and green parts separated)
  • 2 ¼ cups chicken broth
  • 1 cup boneless skinless chicken thighs - (approximately 8 oz.) cut into strips
  • 8 oz. dry spaghetti
  • 2 Tbsp cilantro - finely chopped
