Chocolate Chip Banana Oat Mini Muffins

Ingredients
  • 2 bananas
  • Single serve container vanilla Chobani Zero
  • 2 eggs
  • 2 cups Quaker rolled oats
  • 1 tablespoon baking powder
  • Vanilla extract
  • 6 tablespoons mini chocolate chips
  • 2.5 tablespoons chia seeds
Steps
  1. Preheat oven to 400°. Lightly spray a mini muffin tray with cooking spray.
  2. Throw all the ingredients, except the mini chocolate chips and chia seeds, into a food processor or blender. Blend until combined but slightly chunky, or to desired texture.
  3. Fold in the chia seeds and mini chocolate chips.
  4. Scoop batter into mini muffin tins. I made 29 mini muffins.
  5. Bake at 400° for 7 to 9 minutes, or until tops are set and lightly golden.
  6. Cool in tin for 5 minutes, and then transfer to wire cooling rack. Enjoy!
