AIP Tigernut crunch
Ingredients
  • 1 cup of coconut milk
  • 1 T AIP compliant vanilla
  • 3 T maple syrup
  • 2 T coconut sugar
  • 1 cup tiger nuts
Steps
  1. This breakfast IP idea experiment turned out excellent!
  2. I didn't really measure anything, so I'll give approximations-  feel free to experiment with it for your own taste.
  3. (Basically enough coconut milk to let the IP come to pressure, enough tigernuts to not get lost in the liquid, and enough other stuff to give it a slightly sweet flavor)
  4. Manual high pressure 20 min NR.
  5. The tigernuts get crunchy and easy to chew.
