Ingredients
- The SPH Soft Sourdough Sandwich Bread
- subheading: Indredients:
- 160 g sourdough discard
- 400 g water (warm)
- 800 g all purpose flour
- 16 g sea salt
- 40 g sugar or honey
- 96 g canola oil
- 12 g instant yeast
- In a stand mixer bowl, combine the discard, water, and flour and mix until shaggy. Cover and leave to rest for 30 minutes.
- Now add the salt, sugar, canola oil, and yeast and knead on low with the dough hook for 6 minutes (if hand kneading it will take 10 minutes).
- Put the dough into a greased bowl and cover with plastic wrap and leave to rise until doubled (about 1 hour).
- Grease 2 9x5 loaf pans. Once the dough has doubled, split the dough into 2 and flatten each out into a rectangular shape with the short side facing you. You will roll the dough up tucking the ends in as you go. Once it is in a loaf shape, pull the dough towards you to tighten the top and pinch the ends to make sure they’re sealed. Once it is shaped place the dough into the greased pans with the seam side down and smooth side up and let proof until it is just above the rim of the pan (about 30 minutes).
- Preheat oven to 350 degrees F with your oven rack in the middle position. Right before baking spray the tops of your loaves with a water mist and bake for 40 to 45 minutes until it is golden brown. Butter the tops and turn out onto a cooling rack.
