Blueberries & Cream Pie

2 teaspoons lemon juice

2 and ¼ cups (around 430 g) fresh or frozen blueberries (do not thaw)

2 Tablespoons ( 25g) granulated sugar

subheading: Graham Cracker Crust:

1 and ½ cups ( 150g) graham cracker crumbs (about 10 full sheet graham crackers)

3 Tablespoons ( 38g) granulated sugar

5 Tablespoons ( 72g) unsalted butter, melted

subheading: Filling:

1 cup (240ml) cold heavy cream

12 ounces ( 340g) block cream cheese, softened to room temperature

¾ cup ( 90g) confectioners’ sugar

1 teaspoon pure vanilla extract

1 teaspoon lemon juice

optional for topping: homemade whipped cream
