Babish Kimchi
Ingredients
  • 1 C Gojoogaru
  • 1 C chopped onion
  • 15 garlic cloves
  • ¼ C peeled ginger
  • 2 TBSP salt
  • 2 TBSP sugar
  • 2 TBSP Oyster sauce
  • 1 TBSP Soy sauce
  • ¼ C Fish sauce
  • 2 TBSP Rice Wine Vinegar
  • ½ C Water
  •  
  • Head of cabbage
Steps
  1. Blend all, except cabbage, until as smooth as possible.
  2. Coat cabbage quarters in paste, place in jars to ferment.
  3. Lid jars loosely to allow gas to escape.
  4. Ferment for 2 to 3 weeks in the dark.
