  • 2 stalks rhubarb, trimmed, chopped into 1.5cm pieces
  • 1 pear, peeled, cored, chopped
  • 1 orange, zested, juiced
  • 1 tbs pure maple syrup
  • 4 free range eggs
  • ½ cup reduced-fat milk
  • 2 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 8 thick slices seeds & grain sourdough bread (see tip)
  • olive oil spray
  • 375g light smooth ricotta
