Ingredients
  • 1.5 cups chopped dates (see notes)
  • ½ cup raisins
  • ½ cups coconut sugar (or brown sugar or any minimally processed granulated sweetener)
  • 3 TBS blackstrap molasses
  • 1 cup hot water (not quite boiling but pretty hot)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 flax egg (1 TBS ground flax seeds + 3 TBS water)
  • 1 tsp vanilla
  • ⅓ cup applesauce
  • 1 TBS brandy (optional-see notes)
  • 1 cup chopped walnuts
  • 1¾ cups flour (I used Bob’s Red Mill Gluten-free 1:1)
