Warm orzo, black-eyed bean and herb salad from Sabrina Ghayour
May replace beans with butter beans or black beans. Add sliced cherry tomatoes too.
Ingredients
  • 250g orzo pasta
  • olive oil
  • 2 garlic cloves, crushed
  • 3 tablespoons tomato puree
  • 400g can black-eyed beans, drained and rinsed
  • 1 small packet (about 30g) of flat leaf parsley, finely chopped
  • 1 small packet (about 30g) of dill, finely chopped
  • 1 small packet (about 30g) of fresh coriander, finely chopped
  • 1 small packet (about 30g) of chives, thinly sliced
  • juice of ½ a lemon
  • Maldon sea salt flakes and freshly
  • ground black pepper
