Gluten Free, High Protein Lasagna Soup
Ingredients
  • 1 tablespoon olive oil (organic)
  • 2 pounds ground turkey
  • 1 ⁄2 yellow onion (diced)
  • 3 teaspoons garlic (minced)

  • 14.5 ounces diced tomatoes
  • 14.5 ounces crushed tomatoes
  • 4 ounces tomato paste
  • 2 teaspoons basil
  • 1 teaspoon oregano
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • salt (to taste)
  • pepper (to taste)
  • 9 ounces lasagna noodles (I used the Jovial gluten free rice lasagna noodles)
  • 1 1 ⁄4 cup mozzarella cheese (freshly grated)
  • 1 ⁄2 cup parmesan cheese (freshly grated)
  • 2 ounces ricotta cheese
