How to Make Lemon Curd
Ingredients
  • 100 g (½ cup) caster/superfine or granulated sugar
  • zest of 2 lemons
  • 5 UK medium/US large egg yolks, room temperature
  • ¼ tsp salt
  • 80 g (⅓ cup) freshly squeezed lemon juice (you'll need about 3 to 4 lemons)
  • 65 g (½ stick + ½ tbsp) unsalted butter, cubed
